You know, you can make vodka out of anything you can ferment, Wohlfert uses corn. The rule is that to be vodka it must come of the still at least once at 190 proof or more. After the vodka comes off the still at 190 proof or better, they proof it down, run it through charcoal filters and proof it down again and bottle it. Wohlfert doesn't do that. After it comes off the still, they put it back in and run it one more time through their whiskey column for 24 hours. They call it a "finishing run". They do 1 finishing run per batch, and after 2 batches they must stop and clean the still because the inside of the copper has turned practically black from all the crud it picked up from that perfectly clean vodka you would have drunk.
